Method

  1. Blanch the pork belly cubes for 5 minutes in boiling water. Drain and rinse — this removes scum and gives a cleaner final dish.
  2. In a heavy pot, heat the oil and palm sugar over medium-low. Stir for 4 minutes until the sugar melts and turns the colour of strong tea. Watch closely; the line between caramel and burnt is thirty seconds.
  3. Add fish sauce — it will hiss. Stir to combine. Add the pork belly and turn each piece in the dark caramel until coated.
  4. Add garlic, shallots, salt and pepper. Pour in coconut water; the meat should be just submerged. Add a small splash of water if not.
  5. Bring to a low simmer. Cover partially and cook over the lowest possible flame for 75 minutes. Skim any foam in the first 15 minutes. The pork should turn from pale pink to deep amber and become spoon-tender.
  6. Add the peeled eggs in the last 30 minutes — they will absorb the colour and gain a marbled mahogany skin. Continue simmering until the sauce reduces by half and the pork-belly fat trembles. Rest covered 15 minutes; the dish improves the next day. Serve with steamed jasmine rice and pickled mustard greens.

The dish keeps for a week refrigerated and improves daily, which suits the low-cooking-during-Tet ritual. The eggs are symbolic: round, golden, plentiful. The coconut water is what distinguishes the southern (Mekong) version from the more northern thit kho tau, which uses water instead and turns out drier and saltier.
