Method

  1. Slice tomatoes and cucumbers thinly.
  2. Drain ice-bathed onions; combine with vegetables.
  3. Add chilies, dill, cilantro and mint.
  4. Sprinkle salt over the salad; toss gently to draw out tomato juice.
  5. Drizzle vinegar and olive oil.
  6. Rest 10 minutes; serve at room temperature.
