वो (Wō)

Newari black-lentil pancake — urad dal ground with spices and pan-cooked into a thick savoury cake, eaten plain or topped with minced buffalo and egg. The Kathmandu Valley signature snack.

Method

  1. Drain the soaked urad dal. Grind to a thick paste with ginger-garlic paste, ground timur, turmeric, salt and a splash of water — texture should be slightly grainy.
  2. Stir in chilies, minced onion and cilantro. Cover and rest 30 minutes for the flavours to integrate.
  3. If making the meat-topped version: stir-fry minced buffalo with smashed garlic, Nepali masala, salt and 1 tbsp mustard oil for 6 minutes. Set aside.
  4. Heat 2 tbsp mustard oil in a wide non-stick pan over medium heat. Pour about 6 tbsp of dal batter into the pan and spread into a 16cm round, slightly thicker than a pancake.
  5. Cover with a lid for 4 minutes — the bottom should set and turn deep golden.
  6. For plain wo: flip and cook another 3 minutes. For meat-topped wo: spread a quarter of the cooked minced meat over the pancake; crack an egg directly on top, scramble lightly into the meat. Cover for 3 minutes until set. Slide onto plates. Serve with achar.

Can Newari Wo be made ahead?
Newari Wo is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 12 minutes.
Is Newari Wo spicy?
Newari Wo as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

Wo (also called bara in some Nepali contexts) is one of the central dishes of Newari cuisine. The Kathmandu Valley indigenous Newars have developed dozens of urad dal pancakes; wo is the most universal. The meat-and-egg topped version is the indulgent version; plain wo is the everyday breakfast. Old Patan and Bhaktapur have specialty wo shops that have operated for generations. The dish appears in samay baji and at every Newari festival meal.
