Mango Shaved Ice

Method

  1. Make the mango syrup first: peel and dice 1 mango; reserve the flesh. Combine the trimmings (skins, fibrous parts around the stone) with sugar and water in a small pot; simmer 5 minutes. Strain through a fine sieve, pressing the pulp. The strained liquid is mango syrup; cool.
  2. Dice the second mango and the reserved flesh from the first into 2cm pieces. Refrigerate.
  3. Shave the ice using a snow-cone machine to fine, fluffy snow. Alternatively, freeze 500ml of milk into a block (this gives creamier shavings) and process in a high-powered blender or food processor until snow-fine. The texture is the dish; fluffy snow makes mango shaved ice; coarse ice cubes don't.
  4. Mound the shaved ice into wide bowls — building a snow-volcano shape rather than a flat layer. Each bowl gets about 3 cups of shaved ice.
  5. Drizzle 2 tbsp of cooled mango syrup over the ice. Then drizzle 2 tbsp of condensed milk in lines.
  6. Top with a generous mound of mango cubes — at least half a mango per serving. Place a scoop of mango sorbet on the very top. Scatter mochi pieces if using. Serve immediately with a long spoon. The dessert is at peak photogenic quality for about 90 seconds before the ice begins to slump.

The Taiwan mango ? particularly the Aiwen variety from southern Taiwan ? is the star; Honey, Yu Wen and Tu Hu varieties are increasingly available. The dish is a derivative of the Japanese kakig?ri tradition (arriving during Japanese colonial era), but the addition of fresh local mango makes it culturally distinct.
