Phnom Penh's grilled-pork breakfast — thinly sliced pork marinated in coconut and palm sugar, charcoal-grilled, served over rice with cucumber, pickle and a chicken-stock broth on the side.

Method

  1. Marinate the pork slices with coconut milk, palm sugar, fish sauce, garlic, ginger, lemongrass, soy sauce and turmeric. Massage thoroughly. Refrigerate at least 4 hours, ideally overnight.
  2. Light a charcoal grill or heat a heavy ridged pan over high heat.
  3. Grill the pork slices in batches, 90 seconds per side — the slices should char in patches and the marinade caramelise to deep mahogany. The thin slicing means quick cooking; thicker pieces would dry out.
  4. Warm the broth: bring chicken or pork stock to a simmer with sliced spring onion. Season lightly with fish sauce.
  5. To serve: mound jasmine rice on each plate. Lay grilled pork strips over the rice. Add cucumber slices and Cambodian pickled vegetables alongside.
  6. Pour the warm broth into small bowls; serve each diner a small bowl of broth alongside their plate. The breakfast is built: a bite of pork-and-rice, alternated with a sip of broth and a piece of pickle. Modern Phnom Penh restaurants add a halved soy egg on top.
