Nepali ring-shaped fried rice doughnut — fermented rice-flour batter piped into hot oil into thin rings that puff into golden bracelets, eaten for Tihar festival mornings with yogurt and pickle.

Method

  1. Drain the soaked rice. Grind to a smooth paste with the warm milk and water in a blender or food processor. Aim for a thick batter — like very thick pancake batter.
  2. Transfer to a bowl. Stir in rice flour, sugar, mashed banana, ground cardamom, cinnamon, nutmeg, cloves, salt and softened ghee. The batter should be the consistency of thick yogurt; thin with more milk if needed.
  3. Cover and ferment in a warm place for 4 hours, ideally overnight. The batter should bubble lightly and smell faintly fermented.
  4. Heat oil in a deep wok or kadhai to 175°C — the temperature is critical. Too hot and the rings burn before puffing; too cool and they don't puff at all.
  5. Pour the batter into a piping bag with a 1cm round nozzle, or use a sturdy plastic bag with a small corner cut. With one continuous motion, pipe a circle (about 12cm diameter) into the hot oil. The batter should puff immediately and turn pale gold.
  6. Use chopsticks or a long fork to flip the ring after 90 seconds — both sides should turn deep golden. Lift onto a rack. Continue with the rest. Stack the cooled rings; they keep 5 days in an airtight container. Serve at room temperature with yogurt and pickle for breakfast.

Can Sel Roti be made ahead?
Sel Roti is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Sel Roti spicy?
Sel Roti as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

The bell-shape is symbolic; some say the rings represent the cycle of life, others see them as bracelets adorning the festival table. The fermentation is essential; without it the rings don't puff and become dense. Modern Kathmandu has commercial sel roti makers, but the home-made versions remain the standard.
