Method

  1. Heat 4 tbsp oil in a wok to 170°C. Fry the tempeh matchsticks in two batches for 5 minutes each until deeply golden and crispy on the edges. Lift onto a rack.
  2. In the same oil, fry the raw peanuts for 90 seconds until just turning gold. Lift out — they continue to colour off the heat.
  3. Pour off most of the oil, leaving 2 tbsp. Stir-fry the sliced shallots and garlic over medium heat for 4 minutes until deeply golden — don't burn; they go bitter fast.
  4. Add the fresh red chilies, Thai chilies, lemongrass, galangal and torn kaffir lime leaves. Stir 60 seconds until the kitchen fills with the citrus-pine perfume of the aromatics.
  5. Whisk palm sugar and tamarind with 60ml hot water until dissolved. Add to the wok along with kecap manis. Stir for 90 seconds — the sauce should reduce into a sticky glossy syrup.
  6. Return the fried tempeh and peanuts to the wok. Toss vigorously for 60 seconds until every piece is coated. The dish should glisten, not pool with sauce. Serve at room temperature with hot rice. Keeps 4 days refrigerated and gets better.
