Method
- Make the dough: flour, salt, egg, warm water. Knead 8 minutes. Rest 30 minutes.
- Make the filling: combine minced lamb, finely diced pumpkin, onion, garlic, cumin, pepper, salt and lamb tallow.
- Roll the dough out into a thin large rectangle (50cm × 30cm, 2mm thick).
- Spread the filling evenly across the dough, leaving a 2cm border.
- Roll up tightly along the long edge — like a Swiss roll. The roll is the oromo signature shape.
- Slice into 8cm rounds. Place on parchment-lined steamer trays. Steam over rapidly boiling water for 25 minutes. Plate; spoon sour cream over generously, scatter dill.

Oromo is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
