Mont Lin Ma Yar

Method

  1. Whisk all the flours, baking powder, salt and turmeric. Add water gradually, whisking, until the batter is smooth — like single cream. Stir in oil. Rest 30 minutes.
  2. Heat a Burmese mont lin ma yar pan (cast-iron with hemispheric wells) over medium heat. Brush each well with oil.
  3. Pour the batter into each well to fill about 80%. Cover with the pan's lid and cook 90 seconds — the bottoms should set with a faint sizzle.
  4. Crack a quail egg into half of the wells (don't worry — the dome on top will form a closed shape). Sprinkle chopped spring onion, mashed chickpeas and fried split peas across all the wells.
  5. Cover and cook 3 more minutes; the bottoms should be deep golden, the tops set.
  6. Lift each half-sphere out and sandwich them in pairs — bottom-to-bottom, with the egg-and-fillings layer in the middle — to form full spheres ('husband and wife united'). Serve hot.
