Method

  1. Heat oil in a heavy pot. Add the onion paste; cook 8 minutes until pale gold. Add garlic, ginger, turmeric and chili powder; stir 90 seconds.
  2. Add the chicken pieces; sear 4 minutes turning once.
  3. Pour in chicken stock and coconut milk. Add fish sauce. Simmer covered for 30 minutes — the chicken should be tender.
  4. Lift out the chicken; debone and shred. Return to the pot.
  5. Whisk chickpea flour with 200ml of cool stock from the pot to a smooth slurry. Stream into the simmering broth while whisking. Cook 10 minutes — the broth thickens into a smooth, golden, almost-curry-like texture.
  6. Cook the wheat noodles separately for 4 minutes; drain into deep bowls. Ladle the hot ohn no over generously. Top each bowl with a halved boiled egg, sliced raw onion, cilantro, fish-cake slices, fritters and chili. Squeeze lime; each diner stirs at the bowl.
