Sri Lankan coconut milk rice cake — short-grain rice cooked in coconut milk and pressed into diamond shapes, served with lunu miris (raw chili-onion sambol) at New Year and family milestones.

Method

  1. Combine the rinsed rice and water in a heavy pot. Bring to a boil; reduce heat and cook covered for 12 minutes until the water is absorbed.
  2. Pour in the thick coconut milk and salt. Stir gently. Bring back to a low simmer and cook uncovered for 15 minutes, stirring occasionally to prevent sticking. The rice will absorb the coconut milk and turn glossy white-cream coloured.
  3. When the mixture is thick and the rice fully tender, transfer to a flat tray (about 22cm × 22cm) and press down firmly with the back of an oiled spatula. The surface should be smooth and even, about 3cm thick.
  4. Cool for 30 minutes — kiribath sets as it cools. Cut into diamond-shaped pieces with a wet knife.
  5. Make lunu miris: pound the dried chilies, Maldive fish, salt and red onion in a mortar to a coarse paste. Stir in lime juice. Taste — should be ferociously spicy, salty, with the sharp Maldive fish funk underneath.
  6. Serve kiribath cool or at room temperature, with a generous spoonful of lunu miris on the side. Each diner picks up a diamond, dabs with lunu miris, and eats with hands. Kiribath is breakfast, holiday food, and the first food fed to a Sri Lankan child.

Common questions

Can Kiribath be made ahead?
Kiribath is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 30 minutes.
Is Kiribath spicy?
Kiribath as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Kiribath vegetarian or gluten-free?
Kiribath is suitable for vegetarian (and vegan if dairy is omitted) diets.
How hard is Kiribath to make at home?
Kiribath is approachable for a home cook with basic stove skills — total time about 35 minutes, no special technique required.

This recipe is written for 6 servings. To scale, multiply each ingredient proportionally; the cooking times stay the same up to about double the volume. Beyond that, expect to cook in batches because of pan size and heat distribution.
Cultural Note

Kiribath — 'milk rice' in Sinhala — is ceremonial food. It's served at Sinhala-Tamil New Year (April), at the breaking of fasts, at household ceremonies marking new beginnings (a child's first meal of solid food, a new business venture, a wedding). The diamond shape is symbolic and unchanging. The lunu miris pairing is non-negotiable; the contrast of mild creamy rice and aggressive raw-chili-onion is the architecture of the dish. Kiribath without lunu miris is regarded as half a meal.
