Cong You Bing

Northern Chinese scallion pancake — laminated dough with chopped spring onion and lard between flaky layers, pan-fried in oil until shatter-crisp on the outside, chewy within.

Method

  1. Mix salt into flour. Pour boiling water in while stirring with chopsticks, then add cold water. Knead five minutes until smooth. The hot-water dough makes the pancake tender and pliable. Cover and rest 30 minutes.
  2. Make the oil-flour roux: heat 3 tbsp oil in a small pan, add the 2 tbsp flour and stir into a smooth paste. Cool. Stir in five-spice and the second teaspoon of salt — this is the lubricant that gives the layered effect.
  3. Divide the dough into four pieces. Roll each into a thin oval, 25cm long. Spread a quarter of the lard across the surface, then a thin layer of the oil-flour roux, then a generous handful of chopped spring onion.
  4. Roll the oval up like a Swiss roll into a long rope. Coil the rope into a flat spiral, tucking the end underneath. Press flat gently with the palm of your hand. Roll out into a 20cm round, 5mm thick.
  5. Heat 2 tbsp oil in a wide pan over medium. Lower the pancake in and cover for two minutes — covered cooking steams the layers apart. Uncover, flip, cook another two minutes until both sides are deep gold and the layers visibly puffed.
  6. Lift onto a board and tap the edges with the back of a knife — this 'shatters' the layers, the textural reveal that defines a good cong you bing. Cut into wedges. Eat hot, dipped in vinegar with chili oil.

The pancakes are sold at every breakfast cart in Beijing, Shanghai (where they migrated and gained a sweeter, lardier profile) and Taiwan (where they're often topped with egg). The technique of rolling, coiling and re-rolling laminates the dough into dozens of layers — the same principle as Indian paratha and French puff pastry, arrived at independently. The smell of frying scallion in oil is, for many Chinese, the smell of breakfast.
