Choila

छोयला (Choyalā)

Newari grilled-and-spiced buffalo meat — char-grilled and tossed with mustard oil, ginger, garlic, timur, fenugreek and ground roasted soybean. Eaten with beaten rice (chiura) and aila.

Method

  1. Cut the meat into thick steaks. Marinate with ginger-garlic paste, ground timur, turmeric, Kashmiri chili and salt. Rest 20 minutes.
  2. Char-grill the meat over hot coals (or in a very hot ridged pan): 4 minutes per side until deeply charred on the surface but slightly pink at the centre. The char is essential to choila's flavour signature; gas-grilled or pan-cooked versions taste flat.
  3. Cool the meat slightly. Cut against the grain into 1cm-thick slices, then into 2cm cubes.
  4. Heat mustard oil in a small pan until just smoking — destroys its raw pungency. Add fenugreek seeds and let them turn dark brown (10 seconds — they should not burn). Pour the hot oil immediately over the meat in a wide bowl.
  5. Add the matchsticked ginger, sliced garlic, slit chilies, roasted soybean powder, garam masala, ground cumin, jimbu, lemon juice, mint and cilantro. Toss vigorously for 60 seconds — the meat should be coated in a deep brown spice paste.
  6. Taste — should be aggressively spicy, pungent from mustard oil, citrus from lemon, with the timur tingle at the back. Serve at room temperature with beaten rice (chiura) and a glass of aila (Newari liquor) or whisky.

Common questions

Can Choila be made ahead?
Choila is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Choila spicy?
Choila as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Choila vegetarian or gluten-free?

How hard is Choila to make at home?
