Bacolod-style grilled chicken — marinated in calamansi, vinegar, lemongrass and annatto-tinted oil, basted as it grills until the skin lacquers deep orange. Eaten with chicken oil and sinamak.

Method

  1. Make the marinade: combine calamansi juice, vinegar, minced lemongrass, garlic, ginger, soy sauce, brown sugar, pepper and salt in a wide dish. Whisk to dissolve sugar.
  2. Add the chicken pieces. Massage thoroughly. Refrigerate at least 4 hours, ideally 12. The Bacolod standard is overnight; the calamansi-and-lemongrass aroma penetrates deeply.
  3. Make the annatto basting oil: heat 60ml oil and butter with annatto seeds over low heat for 5 minutes until the oil turns deep orange. Strain; discard seeds. This 'chicken oil' is poured over the rice at the table.
  4. Light a charcoal grill — Bacolod inasal is grilled over coconut husks if possible, hardwood otherwise. The signature smoky note comes from the fuel.
  5. Grill the chicken over medium-hot coals for 15–18 minutes, turning every 3 minutes and basting frequently with the orange annatto oil. The skin should turn deep orange-mahogany, lacquered, slightly charred.
  6. Lift onto a wooden board. Serve immediately with garlic rice, a small bowl of sinamak (chili-and-aromatics vinegar), atchara, calamansi, and a small dish of the warm chicken oil for pouring over the rice. The meal is built at the table: rice with chicken oil poured over it, chicken dipped in sinamak, atchara as the palate cleanser.

Can Chicken Inasal be made ahead?
Chicken Inasal is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Chicken Inasal spicy?
Chicken Inasal as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

Cultural Note

Chicken inasal is the dish of Bacolod in Negros Occidental — a city so strongly associated with the dish that 'going to Bacolod' for many Filipinos means eating inasal. The native chicken (manok ng bukid) is leaner and tougher than commercial chicken; the long marination is what tenderises and flavours it. Mang Inasal, the largest fast-food chicken inasal chain, was founded in Iloilo in 2003 and brought the dish to national prominence. The chicken oil — called 'tagboryo' in Hiligaynon — is non-negotiable; rice without it is just plain rice.
