Method

  1. Whisk both flours with palm sugar, white sugar, baking powder, salt and cinnamon.
  2. In a separate bowl, whisk eggs with coconut milk and melted butter.
  3. Combine wet and dry. Whisk until smooth.
  4. Pour into a greased 23cm cake tin. Sprinkle with grated coconut.
  5. Bake at 175°C for 40-45 minutes until set and golden on top.
  6. Cool. Cut into squares. Eat at room temperature with coffee.
