Method
- Whisk flour, baking powder, eggs and salt into the dashi to a thin batter — looser than pancake batter; it should pour like cream. Add soy sauce and rest 30 minutes for the flour to hydrate.
- Heat a takoyaki pan (cast-iron with hemispheric wells) over medium-high. Brush each well and the flat surface between with oil — generously; takoyaki release on lubrication.
- Pour batter to overflow each well so the wells are completely full and a thin layer covers the flat top. Drop a piece of octopus into each well, scatter tenkasu, beni shoga and spring onion across the top, including the overflow zone.
- After 90 seconds, run a metal pick (or a chopstick) around each well to release. Push the flat skin from between the wells in toward each ball, then flip each by 90 degrees so a quarter-skirt of uncooked batter folds underneath. The ball is now half-formed.
- Wait 60 seconds, then rotate again — another quarter-turn. Repeat one more time at intervals so the ball cooks fully spherical. Total time per batch: about ten minutes; the outsides should be deeply browned and crisp, insides should still be loose and creamy.
- Lift onto a plate. Zigzag with takoyaki sauce, then mayo. Shower with aonori and a thick handful of bonito flakes — the flakes will writhe in the residual steam, the show that's supposed to happen. Eat while too hot to be wise.

Can Takoyaki be made ahead?
Takoyaki is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
Is Takoyaki spicy?
Takoyaki as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Takoyaki vegetarian or gluten-free?

Cultural Note
Takoyaki was invented in 1935 by an Osaka street vendor named Tomekichi Endo, who started with a beef-filled snack called rajioyaki (radio-ware, after the new technology) and then swapped to octopus. Osaka claims takoyaki the way Naples claims pizza — every household with a Kansai parent owns a takoyaki pan. The interior is supposed to be molten and slightly underdone; a fully-cooked centre is regarded as the mark of an over-careful cook. Mouth-burns are part of the experience.
