Indonesian yellow chicken soup — turmeric-and-lemongrass broth with shredded poached chicken, glass noodles, hard-boiled egg and a scatter of fried shallots and sambal. Java's everyday breakfast.

Method

  1. Bring water to a simmer with the chicken. Skim foam for 15 minutes. Reduce to a low simmer.
  2. Blend turmeric, ginger, galangal, garlic, shallots and candlenuts to a fine paste with a splash of water. This is the bumbu kuning — the yellow spice base.
  3. Heat 3 tbsp oil in a small pan. Fry the bumbu kuning with coriander and cumin for 5 minutes until fragrant and the colour deepens. Add to the simmering chicken broth along with bruised lemongrass, kaffir lime leaves and salam leaves.
  4. Simmer covered 45 minutes. Lift the chicken out — the meat should pull from the bone with a fork. Cool slightly, shred, and discard the bones.
  5. Strain the broth through a fine sieve, discarding the solids. Season with salt. The broth should be a clear gold-yellow with a deep aromatic depth.
  6. Bring the broth back to a simmer. Pour boiling water over the soaked glass noodles to soften further; drain. To assemble: place noodles, bean sprouts and shredded chicken in deep bowls. Ladle hot broth over. Top with halved boiled egg and fried shallots. Serve with lime wedges and a dish of sambal at the table.

Can Soto Ayam be made ahead?
Soto Ayam is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 60 minutes.
Is Soto Ayam spicy?
Soto Ayam as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

Cultural Note

Soto is a category, not a single dish — every Indonesian region has its soto: soto Madura, soto Banjar, soto Lamongan, coto Makassar. Soto ayam (chicken soto) is the most universal. The yellow colour comes from turmeric, the depth from candlenuts (kemiri) which act as a thickener and richener; without them the soup is thinner. Soto is breakfast in Java, late-night in Surabaya, and street-cart food everywhere. The dose of fried shallots on top is non-negotiable — it's the textural and flavour signature.
