Hand-pressed rice triangles with a salted-plum, salmon flake or tuna-mayo centre, wrapped in a fresh sheet of toasted nori — Japan's most universal portable meal.

Method

  1. Rinse the rice in three changes of cold water until the water runs almost clear. Drain well, then cook with the 440ml water in a rice cooker or covered pot — bring to a boil, drop heat to lowest, cover and steam exactly 12 minutes. Rest off heat 10 more minutes covered.
  2. Grill the salmon under a hot broiler four minutes per side until just cooked through and a little caramelised on the edges. Flake with a fork, discard skin and bones.
  3. Wet your hands in cold water, then sprinkle a generous pinch of salt across both palms — this is what seasons the rice and prevents sticking. Always re-wet between each onigiri.
  4. Take a fistful (about 100g) of warm rice. Press a dimple in the centre, drop in a teaspoon of filling — salmon, an umeboshi, or tuna mayo. Cover with a little more rice.
  5. Cup the rice in your palm and shape into a triangle by pressing with the other hand at three points: top, lower-left, lower-right. Rotate and press three times, lightly — too much pressure makes the rice gummy.
  6. Wrap each onigiri with a strip of nori around the bottom or wrapped fully — fresh nori is crisp, so wrap just before eating if you want crackle. Serve at room temperature with green tea.

Common questions

Can Onigiri be made ahead?
Onigiri is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Onigiri spicy?
Onigiri as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Onigiri vegetarian or gluten-free?

How hard is Onigiri to make at home?

Cultural Note

Onigiri predates sushi by centuries — references appear in eleventh-century texts. The salt on the hands does double duty: seasoning and preserving (the original onigiri were travellers' food, made to keep). The triangular shape is twentieth-century, popularised by convenience stores; older shapes are round (Edo) or barrel (Kansai). Konbini chains in Japan now sell over a billion onigiri a year — a triumph of clever packaging that keeps the nori dry until opened.
