The two-minute miso soup of Japanese breakfast and supper — kombu-katsuo dashi with cubes of silken tofu and a shower of wakame, finished with miso whisked in off the boil.

Miso Shiru

Method

  1. Cold-soak the kombu in the 1L water for 30 minutes (longer is better — overnight in the fridge). Heat slowly to just below boiling; pull the kombu out the moment small bubbles climb the sides.
  2. Add the katsuobushi to the kombu water. Turn the heat off immediately — the residual heat is enough. Let it steep for two minutes; the flakes will sink as they release their flavour.
  3. Strain through a fine sieve lined with kitchen paper. Don't press the flakes; pressing extracts bitterness. This is ichiban dashi, the first-extraction broth used for clear soups.
  4. Return the dashi to the pot. Warm to just below simmering — never boiling once miso is added. Add the tofu cubes and rehydrated wakame.
  5. Place the miso in a small ladle, lower it into the soup, and whisk with chopsticks until the miso disperses into the dashi without lumps. Off-the-heat dispersal preserves the live cultures and the aroma.
  6. Taste — the soup should be salty-rich with a clear bottom note from the dashi, the miso a layer above. Pour into small lacquer or ceramic bowls. Top with spring onion. Drink directly from the bowl, lifting cubes of tofu with chopsticks.

Can Miso Shiru be made ahead?
Miso Shiru is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 8 minutes.
Is Miso Shiru spicy?
Miso Shiru as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Miso Shiru vegetarian or gluten-free?

Miso shiru is one of the three pillars of the traditional Japanese breakfast (rice, miso soup, pickle) and the closing dish of nearly every restaurant teishoku. The dashi quality is the entire dish; instant dashi powder and miso paste make a passable bowl, but a careful kombu-katsuo broth is transformative. Miso comes in dozens of regional types — white shiro miso of Kyoto is sweet and fast-fermented; red aka miso of Nagoya is dark and barely sweet at all. Many households blend.
