Method
- Pat the pig completely dry inside and out — 30 minutes air-drying is ideal. The crisp skin depends on absolute dryness.
- Stuff the cavity tightly with smashed garlic, bruised lemongrass, smashed scallions, chilies, bay leaves, salt and pepper. Sew the belly closed with string or skewer through the seam.
- Truss the pig: skewer it lengthways through the spine for stability on the spit. Tie the legs and arms close to the body.
- Build a fire of coconut husks or hardwood charcoal — Cebu lechon is traditionally over coconut husks for the smoke. Build the coals to a deep red glow with no flame.
- Spit-roast the pig 4 metres above the coals, rotating constantly. (Home oven version: roast at 150°C for 3 hours, then 220°C for 30 minutes for the skin.) Baste with the vinegar-soy-coconut-water-sugar mix every 30 minutes for the first 2 hours.
- Switch to oil basting in the final hour — this creates the signature glass-like crackling skin. The pig is done when the skin is mahogany and crackles when tapped (about 4 hours total over coals). Rest 20 minutes before chopping. Cebu lechon is eaten without dipping sauce — the lemongrass-and-spice stuffing seasons the meat from the inside; tradition holds that 'good lechon needs no sauce'.

Can Lechon Cebu be made ahead?
Lechon Cebu is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 240 minutes.
Is Lechon Cebu spicy?
Lechon Cebu as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Lechon Cebu vegetarian or gluten-free?

Cultural Note
Lechon is the Filipino fiesta centrepiece — every barangay (neighbourhood) has a lechonero who roasts whole pigs for parties. Cebu lechon has the strongest national reputation: the lemongrass-and-spice stuffing seasons the meat from the inside and flavours the steam during cooking, distinguishing it from Manila lechon (lighter stuffing, eaten with liver-based sarsa). Anthony Bourdain called Cebu lechon 'the best pig ever'. The dish is associated with Christmas, weddings and fiestas; the skin is the prized part, sold separately at lechon stands the next day as 'leftover lechon'.
