Sri Lankan stir-fried chopped flatbread — godamba roti shredded with metal cleavers on a hot griddle and tossed with vegetables, egg, curry powder and meat. The percussive street-food signature.

Method

  1. Tear the roti into rough 4cm strips. The size matters — too small and the dish becomes mush; too large and it doesn't absorb the seasonings.
  2. Heat oil in a wide cast-iron pan over high heat. Add curry leaves; let them crackle for 10 seconds.
  3. Add onion, garlic, ginger and green chilies; stir-fry 90 seconds. Add carrot, cabbage and leeks; toss 2 minutes — vegetables should soften but stay crunchy.
  4. Push to one side. Pour in the beaten eggs; let them set for 10 seconds, then break and scramble.
  5. Add the diced cooked chicken (or any pre-cooked protein). Toss to combine. Add curry powder, chili sauce, soy sauce and salt. Stir for 60 seconds.
  6. Add the torn roti. Now the kottu technique: with two metal spatulas (or a heavy knife and spatula), chop and toss the roti continuously against the metal pan for 4 minutes. The pieces should shrink as they fry, the seasoning distribute through, and the noodles char in patches. The clattering rhythm is the kottu signature. Plate immediately with extra curry sauce on the side.

Can Kottu Roti be made ahead?
Kottu Roti is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
Is Kottu Roti spicy?
Kottu Roti as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

Kottu roti is Sri Lanka's most percussive street food — the rhythmic clattering of metal cleavers chopping roti on metal griddles is the soundtrack of Sri Lankan night markets in Colombo, Galle and Kandy. The dish was supposedly invented in the 1970s in Batticaloa as a way to use leftover roti. Each variation has its preferences: cheese kottu (modern), egg kottu (most traditional), chicken kottu (most popular), and the legendary Hawaiian kottu (with pineapple) for the brave. The dish is meant to be made loud — silent kottu suggests the cook isn't really chopping.
