Khao Soi Luang Prabang

Luang Prabang's tomato-based noodle soup — flat rice noodles in a clear pork broth topped with a deeply fragrant tomato-and-fermented-bean meat sauce. Different from Thai khao soi entirely.

Method

  1. Make the broth: blanch pork bones for 5 minutes; rinse. Combine with 2L fresh water, bruised lemongrass and dried chilies. Simmer 60 minutes; strain.
  2. Make the topping: heat oil in a wide pan. Add garlic, shallots and ginger; fry 90 seconds. Add minced pork; cook 5 minutes until just browned.
  3. Add blended tomatoes, tomato paste and tua nao. Simmer for 20 minutes — the topping reduces to a thick, deeply red sauce. Add fish sauce, padaek and palm sugar.
  4. Bring the strained pork broth to a hot simmer. Adjust seasoning with fish sauce.
  5. Cook the rice noodles in unsalted water for 90 seconds; drain into deep bowls.
  6. Ladle hot broth over the noodles. Top each bowl with a generous spoonful of the tomato-pork sauce. Add bean sprouts, spring onion and a sprinkle of cilantro and mint. Each diner stirs the sauce into the broth before eating.

The tua nao (fermented bean paste) is the signature flavour, distinguishing the dish from Vietnamese or Thai noodle soups. Bun Bun cha and Loi Heong are famous Luang Prabang khao soi specialty stalls, operating from 6 a.m. when locals queue for breakfast.
