Taiwanese breakfast rice ball — sticky rice wrapped tightly around pork floss, pickled radish, fried dough fritter, soy egg and crushed peanuts. Eaten standing up at morning bun shops with hot soy milk.

Fan Tuan

Method

  1. Steam the soaked glutinous rice for 25 minutes — line the steamer with cheesecloth and gather the cloth over the top. The rice should be glossy, sticky and translucent.
  2. Tip the rice into a bowl; sprinkle salt and toss gently. Cover with a damp cloth to keep warm and pliable.
  3. Lay a 30cm × 30cm piece of plastic wrap on the counter. Spread 1 cup of rice in the centre into a 15cm × 8cm rectangle, about 1cm thick.
  4. Layer the fillings down the centre of the rice rectangle: 2 tbsp pork floss, sliced pickled radish, half a stewed egg, a length of you tiao, crushed peanuts and fried shallots.
  5. Use the plastic wrap to bring one long side over the fillings, then the other, encasing them tightly. Twist both ends of the plastic to form a tight cylinder. Press into a torpedo shape; the rice should fully enclose the fillings.
  6. Repeat for all four fan tuan. Unwrap before eating. Serve immediately, ideally with hot soy milk (dou jiang) or salty soy soup (xian dou jiang) on the side. The breakfast architecture is rice-ball-in-one-hand, soy-milk-in-the-other.

Common questions

Can Fan Tuan be made ahead?
Fan Tuan is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 30 minutes.
Is Fan Tuan spicy?
Fan Tuan as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Fan Tuan vegetarian or gluten-free?

Cultural Note

Fan tuan is the Taiwanese breakfast ? sold from morning bun shops (zao can dian) that operate from 5 a.m. to 11 a.m. only. Yong He Soybean Milk and similar shops are clustered in every Taipei neighbourhood. The you tiao (Chinese dough fritter) inside is essential; without it the rice ball is just rice and pickle. The dish has Hokkien-Chinese roots; modern variations include sweet fan tuan and seaweed-wrapped Japanese-style. The morning bun shop with hot soy milk hasn't been disrupted by modern dining.
