Method

  1. Marinate the prawns with the first teaspoon of turmeric and salt; rest 10 minutes.
  2. Heat mustard oil in a heavy pan until just smoking. Lightly fry the prawns 30 seconds per side; lift out — they will finish cooking in the gravy.
  3. Reduce heat to medium. Add cardamom, cinnamon, cloves and bay leaves to the same oil; cook 30 seconds.
  4. Add the onion paste; cook 6 minutes until golden. Add ginger and garlic; fry 60 seconds.
  5. Add Kashmiri chili, coriander and cumin; stir 60 seconds. Add 100ml water; cook 4 minutes — the bhuna step where the spices integrate.
  6. Pour in coconut milk gradually, whisking to prevent splitting. Add slit chilies, sugar and salt. Simmer 4 minutes — the gravy should thicken slightly. Slide the prawns back in. Cook 4 more minutes — never overcook prawns; they turn rubbery. Stir in ghee for the finishing gloss. Garnish with cilantro. Serve with steamed rice.
