Afghan layered eggplant — pan-fried eggplant slices layered with tomato sauce and topped with garlic-yogurt and dried mint. The vegetarian centerpiece of Afghan banquet tables.

Method

  1. Salt the eggplant slices on both sides; rest in a colander 20 minutes. The salt draws out water and prevents the eggplant from absorbing excess oil. Pat dry.
  2. Heat oil in a wide pan over medium-high. Pan-fry the eggplant slices in batches, 3 minutes per side, until deeply golden and tender. Lift onto a rack to drain.
  3. Make the tomato sauce: in the same pan with 1 tbsp residual oil, cook sliced onion 5 minutes. Add minced garlic; fry 60 seconds. Add tomato passata, tomato paste, cumin, Kashmiri chili, cinnamon, salt and sugar. Simmer 10 minutes — the sauce should thicken.
  4. Whisk yogurt with garlic and salt. Refrigerate until needed.
  5. Layer the burani: spread half the tomato sauce in a wide serving dish. Layer half the fried eggplant. Top with half the yogurt sauce. Sprinkle with 1 tbsp dried mint. Repeat: tomato sauce, eggplant, yogurt sauce, dried mint.
  6. Garnish with fresh mint leaves. Serve at room temperature with naan or rice. Burani banjan keeps 3 days refrigerated; the flavours integrate further over time.
