Method

  1. Whisk flour, egg, turmeric and salt in a bowl. Gradually whisk in coconut milk, water and oil until smooth — like single cream. Strain through a fine sieve to ensure no lumps.
  2. Pour the batter into a roti jala mould (a ladle with multiple narrow spouts). If you don't have one, use a piping bag with a small round tip, or a clean squeeze bottle.
  3. Heat a non-stick or cast-iron pan over medium-low. Brush lightly with ghee.
  4. Hold the mould 5cm above the pan and move it in a circular spiral pattern, releasing batter in lacy lines. The pattern should be a 20cm round of intersecting lines — like a fishing net (jala).
  5. Cook 60 seconds — the underside should set and turn pale gold. Roti jala is not flipped; the steam from cooking sets the top. Lift gently with a spatula.
  6. Fold the cooked roti jala in half, then in half again to form a triangle. Stack on a plate. Repeat. Serve warm with hot chicken curry; the diner tears the roti jala and uses it to scoop up curry.

Can Roti Jala be made ahead?
Roti Jala is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Roti Jala spicy?
Roti Jala as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Roti Jala vegetarian or gluten-free?

Roti jala — 'net bread' — is a Malay Indian-Muslim festive dish, served at Hari Raya, weddings and open houses. The lacy pattern is decorative but also functional: the holes hold curry like a sponge. Each cook has a slight variation in pattern; some make tighter weaves, some looser. The traditional roti jala mould has 4 or 5 spouts; some modern versions have 12. The dish is paired almost exclusively with chicken curry — the rich coconut-curry profile of South Indian-Muslim cooking that travelled to Malaysia.
