Method

  1. Steam the grated coconut with the pandan leaf and 1/2 tsp salt for 5 minutes — this releases coconut perfume and ensures food safety. Cool. Discard pandan.
  2. In a bowl, combine glutinous rice flour, regular rice flour and salt. Pour in the pandan extract gradually, then warm water, kneading by hand into a soft, pliable dough — like Play-Doh. Adjust water by a tablespoon at a time.
  3. Take a small portion of dough (about 12g) and flatten in your palm. Place a teaspoon of finely shaved gula melaka in the centre. Bring the edges of the dough up and over, pinching closed at the top to seal. Roll between palms into a smooth ball. The seal must be airtight — molten gula melaka leaks through gaps.
  4. Bring a wide pot of water to a rolling boil. Lower the onde-onde balls in batches of 8–10. They will sink, then float as they cook — about 4 minutes.
  5. Lift the cooked onde-onde out with a slotted spoon. Drop directly into the bowl of grated coconut while still hot — the coconut sticks to the wet onde-onde. Roll to coat thickly.
  6. Serve at room temperature, ideally within 4 hours. Eat in one bite — the gula melaka inside is molten and sweet; biting half is risky for any clean shirt.

Common questions

Can Onde-Onde be made ahead?
Onde-Onde is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
Is Onde-Onde spicy?
Onde-Onde as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Onde-Onde vegetarian or gluten-free?

Cultural Note

Onde-onde is the Malaysian counterpart to Indonesian klepon — the same structure, different name, slightly different pandan-and-gula-melaka ratios. Gula melaka is the smoky, almost-fudgy palm sugar from Malacca; using regular palm sugar produces a paler, less complex centre. The Malaysian version is found in every kopitiam and night market; serious kuih shops package onde-onde fresh-made in pandan-leaf cups. The dish is one of the great Southeast Asian sweets; its pleasure architecture — the burst of liquid sugar against the chewy outside and rough coconut — is hard to improve on.
