Method

  1. Bring stock to a simmer in a wide pot. Whisk in tamarind paste; the broth turns cloudy amber.
  2. Add pineapple, tomato and taro stem. Simmer 10 minutes — the fruit and vegetables should soften and contribute their sweetness and acidity to the broth.
  3. Season with fish sauce and sugar. Taste — should be aggressively sour first, then salty, with the pineapple sweetness running underneath. Adjust tamarind for more sourness.
  4. Slide the fish pieces in carefully. Cook 4 minutes — pull off the heat the moment the flesh turns opaque. Overcooking turns the fish dry.
  5. While the fish cooks, fry the garlic: heat oil in a small pan, fry minced garlic 60 seconds until pale gold. The colour should not exceed amber — burnt garlic is bitter.
  6. Add okra and bean sprouts to the soup off the heat. Throw in the herbs (rice paddy herb, sawtooth coriander) and chilies. Drizzle the garlic-and-oil over the top. Serve immediately with rice on the side; canh chua is the soup of a multi-dish southern Vietnamese family meal, rarely the only thing on the table.
