Method
- Bring 1L water to a rolling boil. Drop in the tapioca pearls — they will sink. Stir once gently to prevent sticking. Cook for 25 minutes (longer for bigger pearls).
- Turn off the heat. Cover the pot and rest 15 minutes — the pearls continue to cook in the residual heat. Strain.
- Make the brown sugar syrup: combine brown sugar and 60ml water in a small pot. Simmer 4 minutes until syrupy. Toss the cooked pearls in the syrup; this both flavours and prevents sticking. Refrigerate.
- Brew the tea: pour boiling water over loose tea leaves; steep 5 minutes (Taiwanese boba tea is brewed strong, almost bitter). Strain. Stir in sugar to dissolve. Cool to room temperature, then refrigerate.
- To assemble: divide cooled pearls between two tall glasses (about 2 tbsp per glass; some prefer more). Add ice cubes. Pour cold tea to fill three-quarters. Top with cold milk; the milk will swirl into the tea creating the photogenic colour gradient.
- Serve immediately with a fat boba straw — the straw must be wide enough to accommodate the pearls. Drinkers stir to combine, then alternate between sucking up tea and chewing the pearls.
