Pancit Bihon

Method

  1. Soak the bihon in warm water for 8 minutes until pliable but not soft. Drain and set aside.
  2. Heat oil in a wok or wide deep pan over medium-high. Stir-fry garlic and onion 90 seconds. Add chicken; cook 3 minutes until just done. Add prawns and Chinese sausage; cook 60 seconds.
  3. Lift everything out of the pan with a slotted spoon, leaving the oil. Add carrot, cabbage and snow peas to the same pan; stir-fry 2 minutes until just barely wilted. Lift out.
  4. Pour stock, soy sauce and fish sauce into the pan. Bring to a simmer. Add the soaked bihon and toss gently — the noodles will absorb the broth and turn from white to amber as they cook. Stir occasionally for 4 minutes; if too dry, splash in more stock.
  5. Return the chicken-prawn-sausage mixture and the vegetables. Toss everything together for 90 seconds. Add black pepper.
  6. Plate on a wide platter. Top with fried shallots, sliced spring onion. Serve with calamansi wedges. The noodle is meant to absorb a squeeze of calamansi at the bowl — it's the Filipino lift that's never optional.

Pancit Bihon is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.

Pancit Bihon as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
