Sri Lankan green stir-fry — pennywort or other greens shredded and tossed with grated coconut, lime, chili and Maldive fish — a raw-warm salad that anchors every Sri Lankan rice-and-curry plate.

Method

  1. Wash the greens thoroughly. Roll the leaves tightly and slice into very thin chiffonade — the strands should be about 2mm wide. The fineness of the cut is the marker of a careful cook.
  2. Combine the chiffonaded greens with grated coconut in a wide bowl. Toss gently — the coconut should coat the greens.
  3. Add red onion, green chilies, Maldive fish, salt, chili powder and lime juice. Toss thoroughly with the hands (preferably) — the warmth of hands releases the coconut oils and helps everything bind.
  4. For the warm version: heat 1 tsp oil in a wide pan over medium heat. Add the mallum and toss for just 60 seconds — the greens should wilt slightly but stay vivid. Most Sri Lankan home cooks make the dish raw, with the slight wilting from contact with hot pan (or just from the salt and lime).
  5. Taste and adjust — should land sharp from lime, salty from Maldive fish, with the coconut sweetness balancing the chili. Serve at room temperature as part of a rice-and-curry plate.
  6. Mallum is meant to be eaten the same day; the lime juice causes the greens to go limp and dark within 24 hours.
