Method
- Heat 2 tbsp oil in a wok over medium-high. Stir-fry garlic and ginger 60 seconds. Add minced chicken and dried shrimp; cook 4 minutes until the chicken is just done.
- Add bamboo shoots and stir-fry 4 minutes — they should soften and absorb the seasoning. Add chopped scrambled eggs, kecap manis, soy sauce, palm sugar, white pepper and salt. Cook 90 seconds until uniformly mixed. Cool completely before wrapping; warm filling tears the wrappers.
- Place 2 tbsp filling along the lower third of a wrapper, shaping into a 6cm log. Brush the far edge with water. Fold the bottom up, the sides in, then roll tightly to the top. Repeat for all 16 rolls. Cover with a damp cloth as you work.
- For the sweet sauce: combine palm sugar, water and soy sauce in a small pot. Simmer 5 minutes until the sugar dissolves and the syrup thickens slightly. Whisk the tapioca slurry; stir into the sauce while bubbling. The sauce should turn glossy and coat a spoon.
- Heat oil to 180°C. Fry the rolls in batches for 4 minutes until deeply golden and crispy. Drain on a rack.
- Serve hot. To eat the Semarang way: take a piece of raw scallion, hold it in one hand; pick up a lumpia with the other; bite alternately — the raw scallion's sharp green note balances the sweet rich filling. Dip into the sweet brown sauce; raw garlic and chili at the table for the brave.

Cultural Note
Lumpia Semarang is the city's most famous food export — invented in the 1860s by a Chinese immigrant who married a local Javanese woman, fusing Chinese spring-roll technique with Indonesian bamboo and ebi. Two main schools survive: Lumpia Gang Lombok (the original family) and Lumpia Mataram. The raw-scallion accompaniment is the dish's textural counterpoint; eating lumpia without it is regarded as eating only half the dish in Semarang.
