Method

  1. Pat the chicken pieces completely dry. Toss with salt, pepper and rice wine; rest 15 minutes — the alcohol penetrates the skin and improves the crisp.
  2. Whisk potato starch, plain flour and baking powder. Add ice-cold water gradually until you have a thin batter — like single cream. Cold batter holds the coating better.
  3. Dunk the chicken in the batter, lift to drain off excess (a thick coat steams instead of frying), and lower into 160°C oil. Fry in batches for 7 minutes until pale golden and just cooked through. Lift onto a rack and rest 5 minutes — the cooling step is the Korean trick.
  4. Increase oil temperature to 190°C. Return the rested chicken in batches for 3 minutes — it will turn deep amber and the coating shatter-crisp. The double-fry is non-negotiable for KFC-style crisp.
  5. Make the sauce: combine gochujang, honey, ketchup, soy sauce, rice vinegar, sesame oil, garlic and ginger in a wide pan. Simmer 4 minutes, stirring, until glossy and slightly thickened.
  6. Toss the hot fried chicken in the warm sauce so every piece is coated. Don't soak — the coating should be glazed, not sodden. Plate immediately, scatter sesame seeds. Serve with pickled radish (chicken-mu) and cold lager — the chimaek (chicken + maekju beer) tradition demands it.
