Method

  1. Cook the sago pearls: bring 300ml water to a boil. Add sago and stir constantly for 12 minutes — they will turn from white to mostly translucent with a small white centre. Drain and rinse under cold water.
  2. Soak the cooked sago in cool water until ready to use. They will fully clarify into glassy pearls.
  3. Make the arnibal: combine muscovado sugar, 200ml water, pandan and salt in a small pot. Simmer 8–10 minutes until the syrup thickens slightly and turns deep amber. Stir in vanilla. Discard pandan.
  4. Steam the silken tofu in a steamer for 5 minutes — taho is served warm. (If using a Japanese tube, simply warm under hot tap water.)
  5. To serve: spoon the warm tofu into a tall glass or small bowl, scooping it from the top with a wide flat spoon to mimic the Filipino taho hawker's technique — long thin slabs, not chunks.
  6. Drizzle 2 tbsp of warm arnibal over the tofu. Top with a generous scoop of drained sago pearls. Serve immediately, eaten with a long spoon. The contrast of warm, soft tofu, sweet syrup and chewy pearls is the dish.

Common questions

Can Taho be made ahead?
Taho is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.
Is Taho spicy?
Taho as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Taho vegetarian or gluten-free?
Taho is suitable for vegetarian (and vegan if dairy is omitted) diets.
How hard is Taho to make at home?
Taho is approachable for a home cook with basic stove skills — total time about 45 minutes, no special technique required.
Can Taho be scaled up or down?
This recipe is written for 6 servings. To scale, multiply each ingredient proportionally; the cooking times stay the same up to about double the volume. Beyond that, expect to cook in batches because of pan size and heat distribution.
Cultural Note

Taho is the morning street food of the Philippines ? vendors carry two buckets on a wooden yoke (warm tofu and arnibal-with-sago), walking residential streets calling 'Taaa-hoooo!'. The vendor scoops a slab of tofu into a glass with a wide flat spoon ? the speed and economy of motion is part of the show. Taho was brought by Chinese traders centuries ago (douhua) and became Filipino. Davao adds saba banana; Manila is purist. The vendor's call is so iconic that the word 'Taho' calls up a sound, not a taste.
