- Chop the cooled chicken into bite pieces, leaving the bones in. Plate over a mound of fragrant rice with cucumber slices. Serve three small bowls of: the chili sauce, ginger-scallion oil, thick dark soy. A bowl of the poaching broth is on the side. Each diner builds: rice, chicken, dab of each sauce.
