Aarav Devi is the recipes editor at Taste of Asia Guide. He grew up in a household where his grandmother kept a hand-written recipe book that went back four generations — the foundation of his entire career. He worked as a development chef for two years at the Oberoi New Delhi before moving to writing full-time. His byline has appeared in The Hindu, Saveur, and Whetstone. He is the author of one self-published cookbook on Bengali sweets (2021).
A recipe should never have to apologise for its tradition. If a dish was meant to be cooked over charcoal, write down charcoal. If it needs four hours, say four hours.
